The Rules Of The Critic

All restaurants are judged on six aspects, each being worth 1-4 points, with the exception of rice, (worth up to 5) if the rice tastes bad, or isn't fully cooked (yes I've recieved both, thanfully not at the same time) the sushi is about as ruined as if the fish were bad.*

(In order of importance)

1. Rice - Is it perfect (sweet with a mild vinegar tanginess) or is it just plain barely sticky rice.

2. Sauces - Are there a variety of sauces (a sweet one, a good mayo, and a good spicy sauce, and preferably more) and are they used liberally, or are they stingy with bad sauce.

3. Combinations - Of fish/other fillings in/on the rolls that is, not how many (you can have infinite bad combos, as some restaurants do).

4. Frying - How well are the shrimp, tempura, and hopefully some rolls, are fried (just right or too hard/soggy and tasting like old oil?)

5. Price - Most places charge $9 - $13 for a standard roll and $4 - $5 for an order of nigiri, so these prices cant be considered bad (but paying less is always better right?)

6. Aesthetics - The food and the location. Does it look like a good sushi restraunt? or a used storage unit with tables? (this comes last because who cares as long as the food is good, but than again if you want to go on a date or something, it should be nice.

*You may wonder why quality of fish isn't number one, well there are 2 major sashimi grade fish suppliers in sacramento, so in theory, they should be equal, but if the restaurant is going to kill you the rest of the review is kind of pointless.
